The quality of a sake depends on a lot of things, but one of the most important factors comes down to rice milling. Rice milling is the process of shaving away the outer shell of a grain of rice. The more that is shaved away, the more pure the rice becomes. Some of the lower quality sakes will have 10% or 15% of the outer shell taken away. But a high quality product like Junmai Daiginjo will have something like 50% to 65% shaved away, which is the greatest amount of any category of Sake. See, we weren’t kidding when we said the stuff was premium quality!
