Junmai Sake
Unlike Junmai Ginjo and Junmai Daiginjo, Junmai sake is a little more broad in what it constitutes. “Junmai” simply means that the sake is pure, and that there have been no additives for taste, color, or alcohol content. It has become common place among many sake companies to add flavor enhancers, additional color, or distilled alcohol to increase production and shorten fermentation times, sometimes at the cost of the sake’s quality.
