What are Vermicelli Noodles? Vermicelli Noodles (also known as Rice Sticks, Rice Vermicelli, or Rice Noodles) are a popular noodle throughout China and Southeast Asia where they are commonly used as an ingredient in stir-fries like Pad Thai, soups such as Vietnamese Pho and as a crispy topping for salads. The term vermicelli may also refer to vermicelli made from mung beans, which turn clear or translucent when cooked.
