Simple to Prepare
1. Cook Organic Soba in rapid boiling water for 2 minutes (salt or oil is not needed).
2. Drain, then rinse well with cold water. Drain again.
Product Recipe
Recipe for Salmon, Cucumber & soba Noodle Salad (Serves 5)
- 10.58 oz. Hakubaku Soba noodles
- 1 Lebanese cucumber (cut into pieces or cubes)
- 7 oz. sliced smoked salmon (cut into strips)
- 2 spring onions (finely sliced)
- 1 cup herb of your choice
- 1 lime (cut into wedges)
Dressing: Balsamic Vinaigrette or make your own dressing combining the following: 3 fl oz. fresh lime juice, 1 tbsp sesame oil, 2 tbsp fresh ginger (finely grated), 1 tbsp caster sugar, 1 fl oz. soy sauce.
In large bowl whisk dressing ingredients together. Cook Soba Noodles as per instructions (above). In a large bowl, combine noodles, cucumber, smoked salmon, spring onions and herb of your choice. Strain dressing pour over noodle mixture. Toss gently. Serve with lime wedges.
