Simple to Prepare:

Product Recipe
Recipe for Salmon, Cucumber & soba Noodle Salad (Serves 5)
- 10.58 oz. Hakubaku Soba noodles
- 1 Lebanese cucumber (cut into pieces or cubes)
- 7 oz. sliced smoked salmon (cut into strips)
- 2 spring onions (finely sliced)
- 1 cup herb of your choice
- 1 lime (cut into wedges)
Dressing: Balsamic Vinaigrette or make your own dressing combining the following: 3 fl oz. fresh lime juice, 1 tbsp sesame oil, 2 tbsp fresh ginger (finely grated), 1 tbsp caster sugar, 1 fl oz. soy sauce.
In large bowl whisk dressing ingredients together. Cook Soba Noodles as per instructions (above). In a large bowl, combine noodles, cucumber, smoked salmon, spring onions and herb of your choice. Strain dressing pour over noodle mixture. Toss gently. Serve with lime wedges.

| I've purchased both the Hakubaku Organic Soba and Somen. They're easy to make, delicious, and it makes quite a lot! I used the soba for yakisoba and it made enough for four people for a dinner with large servings. I'd highly recommend this product. |

| I have had these noddles before they are great to eat. for Dinner then save some left over's for the next day. try any type of meat are vegetables to go with the noddles. |
