Miso should be stored in the refrigerator after opening and will keep for months. Miso can be used in many ways, including as a soup stock, in sauces, dressings and marinades. Good quality and a very good taste. I enjoy creating blends of red & white miso to make the miso soup I want. I like using more white miso for a "brighter" tasting miso soup.
