Nishiki rice involves a new milling process where rice does not have a need for rinsing before cooking. Conventional rice milling cannot completely remove the bran and rice residue. The process uses heated tapioca to blend with the rice kernels. The next process is to remove the tapioca and bran from rice surface as the aleurone layer (bran) is moisturized.
