Cucumber Noodle Salad

    Hakubaku Organic Somen Noodles  
2  large Green Cucumbers  
3  tsp Salt  
1  cup Water  
2  tbsp Top Shell Seasoned Vinegar
1  tsp Sugar  
1/4  tsp House Red Pepper  
1/2  tsp Garlic (minced)  
1   Onion (minced)  
3  tsp WP White Sesame Seeds  
Cucumber Noodle Salad
1. Cook Organic Somen in rapid boiling water for 2 minutes (salt and oil not needed).
2. Drain, then rinse well with cold water. Drain again. .
3. Peel cucumbers thinly & cut across into thin slices. Place in a bowl & sprinkle with the salt and add water.
4. Soak for 15 minutes & drain off all liquid.
5. Combine rest of ingredients, pour over cucumbers and noodles then, mix well & serve chilled.

This unique salad calls for sliced cucumbers mixed in with organic Somen noodles. It offers a tart, yet somewhat sweet flavor, with a flavor enhanced by garlic, red pepper and onions.
