Broccoli Stir-Fry With Soba

1  tbsp Oil  
1  cup Broccoli  
1  cup Sliced Scallions  
1  tbsp Ginger (minced)  
1  tbsp Garlic (minced)
1  package Soba Noodles (buckwheat noodles)  
Broccoli Stir-Fry With Soba
1. Slice broccoli on the diagonal for stir-frying - flowers, stalks and all.
2. Using a small amount of broccoli at a time, stir-fry in a little oil, along with scallions, ginger and garlic.
3. Serve as a topping for Japanese soba (buckwheat noodles).

An easy and tasty stir-fry. Soba is a Japanese noodle made from buckwheat and wheat flour giving it a brownish-gray color.
