Directions
- Use the mesh strainer. Place the rice in the strainer and rinse it with cold water. (Some types of rice do not require any rinsing. Please follow the instruction on the package of rice.)
- Place rice in a rice cooker and add the 6 rice-cups of water.
- Turn on rice cooker.
- In the small saucepan over medium heat, combine the rice vinegar, the sugar, the salt and the konbu.
- Heat the sushi-vinegar-mixture until the sugar and the salt dissolves (do not boil it).
- Remove from heat and let the sushi vinegar cool.
- If you use the hangiri and the wooden paddle or spatula for mixing, damp the hangiri and the paddle or spatula with the tezu* for keeping the rice from sticking to them.
- When the rice is done cooking, transfer it to the hangiri or the large bowl.
- Pour the sushi vinegar evenly over the “hot” rice. (Cold rice and sushi vinegar cannot be mixed well.)
- Loosen the rice grains gently with the paddle or spatula by cut-scoop motions (do not stir, as this will crush the rice grains).
- Cover the rice with a damp cloth for keeping moisture and let it rest for 20 minutes. During that time, turn over the rice at every 7-8 minutes.
- Cover the bamboo sushi mat with the plastic wrap, place the mat on the cutting board with the bamboo strips going horizontally from you.
- Place the nori on the mat.
- Grab about 1 cup of the sushi rice and spread it equally on the nori with a thin layer. Don't leave the nori-edges free of the rice.
- Sprinkle the roasted sesame seeds over the rice.
- Carefully turn it over, so the nori is facing upwards.
- Dab a little wasabi and place the avocado, the crabmeat and the cucumber along the center of the nori.
- Place your fingers on the ingredients and carefully bring your side of the mat over the ingredients. Pull the mat away from you and roll tightly and evenly.
- Squeeze the roll gently until it becomes firm.
- the sharp knife, cut the roll into 8 pieces.
- Serve your California rolls with wasabi, soy sauce and pickled ginger.
