Mochi Rice Cakes are commonly served in celebration of the Japanese New Year. They are often combined with sweets and eaten as a dessert; however, they can be cooked in a variety of ways - everything from frying, grilling, boiling, added to soup, or even cut up and put into a stir-fry.
Rice cake is made of Glutinous rice or sweet rice. The rice is steamed and powdered, then soaked in citric acid. Once placed into a mold, overnight the sweet rice becomes very hard.
