This Bishoku Bannou knife is a traditional all around knife that is designed to perform most tasks in the kitchen. With a design that is a compromise between a standard Chef’s Knife and a Santoku you’ll find that the bevel is pronounced enough to allow the blade to rock back forth, but the blade is not so long as to be clumsy or unwieldy.
