Artichokes with Zesty Blue Cheese

Nutritional Information

Crumbles of rich blue cheese in a thick and creamy dipping sauce, accented with soy sauce and a hint of lemon. It's a new cheesy way to get creative with artichokes! This dish will inspire your taste buds to make more!


  • 4 med Artichokes
  • 1/2 tsp Salt
  • 1/2 cup Mayonnaise
  • 1/2 cup Mushrooms (finely chopped)
  • 2 tbsp Green Onions and Tops
  • 1 tbsp Blue Cheese (crumbled)
  • 2 tsp Soy Sauce
  • 1/2 cup Lemon Juice
  • Grated Peel From Fresh Lemon


  • 1. To prepare artichokes slice 1 inch off tops. Cut off stems evenly with base. Remove small outer leaves. Trim off sharp leaft tips (about 1/2 inch) add salt.
  • 2. Bring water to boil. Reduced heat and simmer covered 25 to 30 minutes or until leaves pull out easily. Meanwhile combine mayonnaise, mushrooms, green onions, blue cheese, less sodium soy sauce, lemon juice and peel. Then chill.
  • 3. Drain artichokes; cool enough to handle. Gently spread open center leaves. Remove choke (fuzzy) portion from center with spoon. To serve, spoon about 1/4 blue cheese mixture into center of each artichoke.
