Asian Recipe Stuffed Grilled Shrimp

This Grilled Shrimp dish has a perfect mastery of the savory and the sweet. You'll get a rich, sweet flavor from the cooked pineapple, and a succulent savory effect from the garlic and chili sauce. Combined, these ingredients form a deliciously complex taste that will keep people coming back for more.

Ingredients

  • 18 large Shrimp (heads and tails intact)
  • 1/2 cup Crushed Pineapple
  • 1/2 cup Green Bell Pepper (seeded, finely diced)
  • 1 Scallion (thinly sliced)
  • 1/4 tsp UC Fresh Chili Sauce
  • 1/4 tsp Coarse Salt
  • 2 pinch Black Pepper (ground)

Directions

  • 1. Prepare a charcoal grill and light 1 hour before grilling, or preheat the broiler to high (500F)
  • 2. Using a Colored Handle Peeler Knife, remove legs from the shrimp. Split the shrimp lengthwise down the middle of the underside. Rinse well under cold water. Dry on paper towels.
  • 3. In a 7" Japanese Soup Bowl, combine the pineapple, green pepper, scallion, UC Fresh Chili Sauce, and salt and pepper.
  • 4. Fill each shrimp with 1 tablespoon of the stuffing and cook them on the grill or broil for 3 minutes per side, until pale pink. Serve immediately.
