Banana Chutney

Yummy bananas gives this sweet and savory chutney a tropical twist. Chutney is an Indian dish that is made by combining fruits and vegetables in a sweet and sour preservative. Eat a small dollop of this unique concoction next to your favorite curry.

Ingredients

  • 6 Bananas
  • 1 cup Onion (minced)
  • 1 cup Raisins
  • 1 cup Tart Apples (minced)
  • 1 cup Apple Cider Vinegar
  • 2 cup Sugar
  • 1 tbsp Salt
  • 1 tsp Ginger (minced)
  • 1 tsp Nutmeg
  • 1/4 cup Cayenne Pepper
  • 1/3 cup Lemon Juice
  • 3 Cloves Garlic (minced)

Directions

  • 1. Peel and mash bananas. In a large casserole dish combine all of the ingredients. Bake in a 350 oven for about 2 hours, stirring occasionally.
  • 2. When thickened, ladle into sterilized jars and seal.
  • 3. Makes about 2 pints.
