Beef Stir Fry with Tri-Color Peppers

Flavor packed pan fried beef tenderloin accented by three different color bell peppers.

Ingredients

  • 1 lb Beef Tenderloin
  • 1 tsp Sesame Oil
  • 1 tbsp Soy Sauce
  • 1/4 tsp Garlic Powder
  • 1/4 tsp Ginger
  • 1/4 tsp Cumin
  • 1 cup Onion Slivered
  • 3/4 cup Green Bell Pepper-(2 1/2)
  • 3/4 cup Yellow
  • 1 cup Red Bell Pepper
  • 1 tbsp White Wine Vinegar

Directions

  • 1. Trim fat from beef, and cut crosswise into 1/4 inch slices. Heat oil in a large non-stick skillet over high heat until hot.
  • 2. Add beef, soy sauce, and next 3 ingredients; stir fry 3 minutes or until beef is done. Remove beef mixture from skillet; set aside and keep warm.
  • 3. Place skillet over medium-high heat; add onion and bell peppers, and stir fry 5 minutes. Return beef mixture to skillet; add vinegar, and cook 1 minute.
  • 4. Substitution: Use pork instead of beef.
  • 5. About 166 calories per 1 cup serving.
