Far Eastern Rice Loaf

Nutritional Information

This easy to prepare dish is almost like rice pilaf or even fried rice but with one difference, its baked in a casserole dish with crunchy veggies and pieces of flaky cooked fish. Have a scoop along side your main dish for a texture packed meal.

Ingredients

  • 1/2 cup Celery
  • 1 Garlic Clove (minced)
  • 1/4 cup Nuts (chopped)
  • 1/8 tsp Cumin
  • 4 oz Fish (cooked)
  • 2 tbsp Onion
  • 1 tbsp Butter
  • 1/4 tsp Turmeric
  • Salt & Pepper to taste
  • 1/2 cup Rice (cooked)

Directions

  • 1. Saute celery, onion and garlic in butter.
  • 2. Stir in remaining ingredients.
  • 3. Bake in greased casserole dish at 350 degrees for 20 minutes.
