Ingredients

  • 3 lbs Red Potatoes (cubed with skin on)
  • 1/2 cup Chicken Broth
  • 4 1/2 tbsp Vegetable Oil
  • 3 cups Yellow Onions (chopped)
  • 3 tbsp Garlic Minced
  • 2 tbsp Ginger Minced
  • 2 1/2 tsp Cumin Seeds
  • 3/4 tsp Red Pepper (dried, crushed)
  • 6 tbsp Cilantro (chopped)

Directions

  • 1. Boil cubed potatoes in water until tender, not soggy. Drain and add chicken broth. Mash with masher.
  • 2. Heat Oil on high heat then add onions, garlic, ginger, cumin, and crushed red pepper.
  • 3. Saute until cumin seeds start to crackle and onions begin to brown, about 8 minutes.
  • 4. Add onion mixture and 4 tbsp cilantro to potatoes.
  • 5. Stir to blend well, adding more broth to moisten if dry. Season to taste with salt and pepper.
