Ginger Peach Delight

Peaches, with a hint Ginger,then topped with ice cream, ground Glico Chocolate Cookie Crush and whipped cream. This is a unique and delectable dessert that is sure to satisfy.

Ingredients

  • 2 cups Flour
  • 1/2 tsp Salt
  • 8 tbsp Butter (chilled and diced)
  • 3 tbsp Vegetable Shortening
  • 1 Egg
  • 1 tbsp Yuzu Cooking Juice
  • 1 tsp Yuzu Cooking Juice
  • 2 tsp Ginger (minced)
  • 2 tsp Glico Chocolate Cookie Crush (ground)
  • 2/3 cups Sugar (plus 1 tbsp)
  • 1/4 cup Tapioca
  • 4 lbs Peaches
  • 2 tbsp Butter
  • 1 Egg White
  • Ice Cream (optional topping)
  • Whipped Cream (optional topping)

Directions

  • 1. Into a medium put flour and salt. The Rub butter and shortening into flour mixture with your fingers till its resembles coarse crumbs. Mix the egg and Yuzu Cooking Juice together in a small bowl then sprinkle into flour mixture using 3-4 tbsp of ice water. Mix till the dough begins to hold together. Wrap then regrigerate for 1 hr.
  • 2. Mix the Yuzu Cooking Juice, ginger, Glico Chocolate Cookie Crush, 2/3 cup of sugar and tapioca in a large bowl. Blanch peaches in a pot of boiling water for 15 seconds then cool in a bowl of cold water. Peel, cut into thick slices and toss in Yuzu Juice mixture.
  • 3. Coat the bottom of a shallow baking dish with thin layer of minced ginger. Place ginger into pan and put a small amount of ginger preservative in each peach.
  • 4. Pre heat oven 375 F. Divide dough in half. Roll into two 12" circles on a floured surface.
  • 5. Line a 9" pie pan with one circle; add peach filling. Drape remaining circle on top, crimp edges, and slack top. Brush with egg ehite and sprinkle with remaining 1 tbsp of sugar. Bake till golden for 60 minutes.
