Pacific Rim Appetizer Torte

This unique appetizer is crammed with tons and tons of savory ingredients and fresh herbs all pressed together inside of a smooth cream cheese mixture. Grab your favorite crackers or chips and dig in!

Ingredients

  • 1 large Chicken Breast
  • 4 tbsp Soy Sauce
  • 2 pkgs Low Calorie Cream Cheese
  • 1 pkg Cream Cheese
  • 2 tbsp Low Fat Milk
  • 1/2 cup Chopped Green Onions and Tops
  • 1 cup Fresh Cilantro Leaves
  • 1/2 cup Fresh Parsely Leaves
  • 1/3 cup Slivered Almonds (toasted)
  • 1/4 cup Vegetable Oil
  • 2 Garlic Cloves
  • 1/2 tsp Grated Fresh Lemon Peel
  • 1/2 cup Fresh or Canned Roasted Red Peppers
  • Green Onion Brushed and Cilantro Leaves
  • Assorted Crackers

Directions

  • 1. Cook chicken in mixture of 1 tbsp. soy sauce and 2 cups water in covered sauce pan for 20 to 25 minutes or until no longer pink in the center
  • 2. Remove skin and bones
  • 3. Shred meat with fingers
  • 4. Place both types of cream cheese in large bowl
  • 5. Stir in 2 tbsp soy sauce in food processor bowl
  • 6. Cover and process until coarsely pureed
  • 7. Line 4-1/2 x 8-1/2 inch loaf pan with plastic wrap, extending wrap 3 to 4 inches past edges of pan
  • 8. Arrange green onions brush and cilantro mixture and end with remaining cream chees
  • 9. Fold plastic wrap over enclosure
  • 10. Refrigerate 6 hours or over night until well chilled
  • 11. To serve, unfold plastic wrap and inver laf onto serving platter discard wrap
  • 12. Serve with crackers on a serving plate
