Prawn Stew with Scallops

This delectable prawn stew is prepared in a tangy, savory soup stock, and is flavored with ingredients like mushrooms, scallops, ginger and lemon juice. The end result is a hearty meal the family will love.

Ingredients

  • 4 Prawns
  • 7 oz Watercress
  • 6 oz Mushrooms
  • 1 oz Fresh Ginger
  • 8 Scallops
  • 1 bunch Chives
  • 1 Red Chili Pepper (small, dried)
  • Salt
  • 3.5 pints Chicken Stock
  • 8 tbsp Soy Sauce
  • 2 tbsp Lemon Juice

Directions

  • 1. Remove prawns from shell, discard vein. Cut flesh into 1 in segments. Rinse watercress in cold water. Wipe dry, then divide into smaller bunches.
  • 2. Clean mushroom, then cut each in half. Peel ginger, slice thinly. Clean scallops carefully.
  • 3. Chop chives. Seed the pepper, slice into rings. Mix soy sauce with lemon juice.
  • 4. Put chicken stock into a flameproof casserole dish with salt and ginger.
  • 5. When stock boils, add vegetables and prawns. Cook slowly. Sprinkle with chives and red peppers.
