Pressed Shrimp Sushi

Easy and simple sushi rice and shrimp pressed together in a large loaf, enough for the whole family.

Ingredients

  • 2 cups Sushi Rice (Small Grain)
  • 1 shet Seaweed 4 x 7 inch
  • 1 Black Sesame Seeds
  • 1 Wasabi Paste
  • 8 Shrimp cooked and shelled
  • 1/2 Cucumber

Directions

  • 1. Cut cucumber into 4 in length; then slice thinly lengthwise. In a 1.5 liter, 8 1/2 x 4 1/4 inch glass dish, place a layer of plastic wrap. Cut cooked shrimp in half lengthwise and place on plastic wrap skin side down, top shrimp with thin bead of wasabi paste.
  • 2. Spread 1/2 of sushi rice (1 cup) and flatten out with a wooden spoon. Place sliced cucumber on rice and sprinkle with sesame seeds. Cover with nori seaweed; spread remaining rice on top. Cover with more plastic wrap and place weight on top then leave for 1 hour. Turn upside-down on a platter and remove plastic wrap.
