Roast Beef with Shirataki Noodles

Try this unique salad alongside your favorite dinner. With such great ingredients like beef, celery, tomatoes, and red onions, this may sound more like a beef stew, but it's just as satisfying.

Ingredients

  • 14 oz Shirataki Noodles
  • 8 oz Roast Beef (cooked, sliced in strips)
  • 1 cup Celery (sliced 1/4" thick)
  • 1 cup Cherry Tomatoes (cut halved)
  • 1/2 cup Red Onion (sliced 1/4" thick)
  • 1 cup Plain Yogurt
  • 1/2 cup Mayonnaise or Salad Dressing
  • 1/4 cup Parsley (chopped)
  • 1/4 cup Tarragon (chopped)
  • 1/4 tsp Salt
  • 1/4 tsp Pepper

Directions

  • 1. In a large bowl, stir together beef, celery, tomatoes and red onions (separated into rings). Stir into Shirataki Noodles. Refrigerate at least one hour.
  • 2. In another bowl, stir in yogurt, mayo or salad dressing, parsley, chives, tarragon, salt and pepper. Cover and refrigerate at least 1 hour.
  • 3. Pour dressing over the entire salad and serve in a large bowl.
