Shirataki Noodles and Beef Salad

A salad like you've never seen before. With ingredients like steak and Shirataki, prepared with delicious foods like garlic, onions, and various peppers, this unique salad will taste great and has enough vegetables to be good for you.

Ingredients

  • 1 lb Shirataki Noodles
  • 1 tbsp Olive Oil
  • 1 tbsp Red Wine Vinegar
  • 1 tbsp Beef Stock
  • 2 tbsp Garlic Cloves (minced)
  • 1-3 dash Pepper (to taste)
  • 1.5 lb Round Steak
  • 1/2 cup Cauliflower Florets
  • 1/2 cup Broccoli Florets
  • 2 med Carrots (julienned)
  • 1/2 med Green Pepper (julienned)
  • 1/2 med Red Pepper (julienned)
  • 2 each Green Onions (thinly sliced)
  • 1 cup Light Italian Salad Dresshing
  • 1/2 tsp Salt
  • 1-3 dash Parmesan Cheese (grated)

Directions

  • 1. In shallow baking dish, combine oil, vinegar, beef stock, garlic, and pepper to taste.
  • 2. Pierce steak at regular intervals with fork; add to marinade and turn to coat. Cover and refrigerate to marinate for 8 hours or overnight, turning occasionally.
  • 3. Remove steak from marinade. Broil for 4-5 minutes per side for medium-rare. Cut in very thin slices diagonally across the grain.
  • 4. Blanch cauliflower, broccoli and carrots; cool immediately in ice water and pat dry. In large bowl, combine steak, Shirataki Noodles, cauliflower, broccoli, carrots, red and green peppers, onions, salad dressing, salt, and pepper to taste.
  • 5. Let stand for 1 hour to blend flavors. Garnish with Parmesan cheese, if desired.
