Shirataki Noodles with Mango and Papaya

Nutritional Information

If you like to try new things then this is right up your alley. It's a salad with a Shirataki noodle base, chopped mango and papaya for a fruity flavor, and cooked shrimp to complete the mixture. There are also chopped vegetables and a subtle mixture of pineapple juice and coconut milk for a uniquely fruity essence.

Ingredients

  • 1 lb Shirataki Noodles
  • 2 1/2 lb Shrimp (cooked)
  • 1 Mango
  • 1 Papaya
  • 1-20 oz Can Pinapple Chunks
  • (drained, unsweetened)
  • 1-11 oz Can Mandarin Segments (drained)
  • 3 Green Onions
  • 1/2 cup Cream
  • 3 tbsp Coconut Milk
  • 1 1/2 tbsp Mayonnaise
  • 1 tbsp Ginger (grated)
  • 1 tbsp Lime Juice

Directions

  • 1. Dressing; Combine all ingredients thoroughly.
  • 2. Peel mango and papaya and chop into chunks.
  • 3. Combine shrimp, all the fruits and the dressing in a bowl.
  • 4. Combine noodles and onions, place on serving plates, and top with salad mixture.
