Vegetable Chop Suey (Microwave)

Nutritional Information

Quick and easy chop suey. Chop suey was introduced to America in the late 1800's. Its usually comprised of crispy bean sprouts, tender pieces of meat, crunchy celery, and Chinese egg noodles. Simply mix the ingredients together and microwave to perfection for a quick meal.

Ingredients

  • 2 cups Sliced Celery
  • 1 cup Chopped Onion
  • 8 oz Mushrooms (sliced)
  • 2 tbsp Butter or Margarine
  • 1/2 cup Water
  • 1 1/2 tbsp Soy Sauce
  • 2 tbsp Cornstarch
  • 1 tsp Instant Beef Bouillon
  • 1 tsp Sugar
  • 28 oz Can Chinese Vegetables
  • 1/8 tsp Pepper

Directions

  • 1. Mix celery, onion, mushrooms and butter in 2 quart casserole, cover.
  • 2. Microwave on high 6-8 minutes, or until tender-crisp. Set aside. In 2 cup measure, combine water, soy sauce, cornstarch, bouillon and sugar.
  • 3. Microwave on high 2 minutes or until thickened, stirring twice during cooking.
  • 4. Mix sauce and remaining ingredients with celery mixture. Microwave at high 4-6 minutes or until thoroughly heated, stirring after half the time. Serve over rice or chow mein noodles.
